Core Apple, and slice into thin round circles.
Slice grapes into thin strips. Depending on the size of the grape, into 4th or 3rds. Spread almond butter, or peanut butter on each apple slice. Top with grapes, nuts, bananas, or anything you can think of :) The possibilities are endless. My girls love this snack. I definitely find it rewarding when I'm looking for an energy boost!

Fritterz
Ingredients: spaghetti squash (see last post for cooking instructions) 1/4 Cup diced celery Flour (I used about 3 cups for the whole batch) 2 Cups diced carrots 2 Cups crushed fresh crutons 2 Eggs whisked (3-4 eggs will make it breakfast) 1/2 Cup diced chicken breast 2 Teaspoons vanilla extract 1 tablespoon milk Olive oil to fry with. Wisk eggs in a separate bowl, with milk and vanilla extract. Prepare veggies, chicken, crutons, egg mixture. Mix all ingredients together except for the flour. Add 2 cups of flour to the mixture. Start to flatten out into a patties, one at a time. Measure out a half cup of flour for each patty. Add half to the top. Add the other half to the top. Pat a little extra flour into the patty if too liqudy. Use olive oil, and add about a half inch to the botton of the pan. Fry on medium heat, until crispy brown on both sides. Flip often to cook evenly. Make in batches. I cud only fit five at a time with a large wok. Sprinkle a little italian seasoning on each one. Tomorrow I will be writing two different recipes using; spaghetti sqaush. They may be served together, using a half a spaghetti squash for each. I'm looking forward to cooking with spaghetti squash for the first time. :) See yall tomorrow. Yes, there will be pictures. To cook:
Cut spaghetti squash in half. Scoop out seeds. I like to roast my seeds with olive oil and italian seasoning and garlic salt. Brush bottom of baking dish with olive oil and drizzle some ontop of squash. Bake @350° for an hour. With a fork scrape the sides for a stringy affect, down to the skin without breaking through. How to cook the fish:
Fry fish in 1 table spoon olive oil or coconut oil. Add sprinkles of italian seasonings, garlic, and onion powder. Flip half way through cooking and cook evenly on both sides. Add lemon. Remove fish from skillet. How to cook the veggies: Cut veggies thick enough to hold them together. Bite size chunks. Zucchini and summer quash can be cut into wedges by cutting down the middle into 4 quaters and chopping into bites size pieces. Whole mushrooms can be cut into wedges, by cutting into 4ths. Sautee veggies into the olive oil from the fish. Keep on low heat and add a little more olive oil. Add seasonings to veggies. Serve with any kind of fish. Rice pilaf also goes well with this too. Ingredients
1. 1 pound ground hamburger 2. Diced tomatoes 1 can or 3 large tomatoes 3. Chopped veggies (onions, peppers, ect.) 4. Small flour tortilla wraps ( corn wraps will not work) 5. Enchilada sauce 6. Enchilada packet 7. Sprinkle cheese 8. Olive oil Brown hamburger. Sautee all vegetables together in skillet. Mix enchilada packet with veggies. Brush olive oil on the bottom of baking dish. Make enchiladas one at a time, to avoid a big mess. Scoop 1/4 cup mixture into the middle of tortilla wrap. Roll up tortilla, and place the crease at the bottom. Brush olive oil on the tops of tortillas, before putting in the oven. Bake @350° until crisp. Pour about a cup of enchilada sauce on top, and sprinkle cheese. Bake again until cheese is melted. Homemade Bagel Bites ingredients 1. mini bagels 2. sauce (I used the left over spaghetti sauce) 3. toppings (pinapple, pepperoni, peppers, onions, cheese, or anything) These were a big hit at my house! Especially with my husband! It's way better for him than eating the processed food they sell in the frozen section. It's interesting to take something you find in the frozen section, and make it at home. With real ingredients and fresh produce, anything can be made healthier. There is no need to eat like a rabbit. :) Brush bottom of the pan and bottom of bagels with olive oil. The girls enjoyed these pizza's, with spaghetti and Graham crackers. They went to bed great after!

Brush olive oil to greese Cassorole dish. 5. Pour egg mixture into Cassorole dish and bake 15 min @350° 6.Melt some extra sprinkle cheese ontop, until metled, before serving. Beef Tenderloin with Mushroom Garlic Sauce Original Recipe:Ingredients I used: olive oil garlic and herb butter seasoned beef tenderloin Organic Mushrooms Crème of mushroom and garlic soup 1. Cut the beef tenderloin into chunks and sauté on the skillet with olive oil and garlic and herb butter. 2. On a different skillet, sauté organic mushrooms, garlic and herb butter, onions, and soup until mushrooms are cooked and sauce is almost done. 3. Put mixture together and finish cooking until done.
